Provision of
Food Services
In order to provide a positive environment for inmates, the Oklahoma Department of Corrections will establish a food service system that meets the standards of the state health department and the basic nutritional needs of incarcerated inmates or exceed the recommended dietary allowance of the National Academy of Sciences as well as the standards of the State Health Department. (2-CO-4C-01)
I. Food Service Standards
Written
procedures will be developed to implement the following standards pertaining to
food services:
A. Dietary Standards
Diets will be
nutritionally adequate, properly prepared, and attractively served.
B. Safety and Sanitation
Safety and sanitation will be enforced to provide for adequate health protection for inmates and staff. A system of continuous monitoring by administrative staff will be implemented.
C. Supplies
A system for
procurement and budgeting practices will be established to assure adequate food
supplies.
D. Records Management
Record keeping
and reporting procedures will be implemented to continuously evaluate the
delivery of services.
E. Prohibition Against Food as a
Disciplinary Measure
Modification of diet will never be used as a disciplinary measure, and provisions will be made to reduce regimentation in service of meals. (3-4301)

Action
The director will
be responsible for compliance with this policy.
The director
will be responsible for the annual review and revisions.
Any exceptions
to this policy statement will require prior written approval of the Board of
Corrections.
This policy
will be effective as indicated.
